Carrot Muffin Recipe




Ingredients:
  • 1 1/2 cups all-purpose flour
  • 3/4 cup ground flax seed
  • 3/4 cup oat bran
  • 1 cup brown sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3/4 cup skim milk
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil
  • 2 cups shredded carrots
  • 2 apples, peeled, shredded
  • 1/2 cup raisins
  • 1 cup chopped mixed nuts



Instructions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease muffin pan or line with paper muffin liners.
2. In a large bowl, mix together flour, flax seed, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon. Add the milk, eggs, vanilla and oil; mix until just blended. Stir in the carrots, apples, raisins and nuts. Fill prepared muffin cups 2/3 full with batter.
3. Bake at 350 F (175 degrees C) for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
4. Serve right away.

Donut Recipe





Ingredients:
2 1/2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup milk
1 egg, beaten
1/4 cup butter
2 teaspoons vanilla extract


Instructions:
1. Mix the flour, sugar, and baking powder together.
2. Stir in the cinammon and nutmeg.
3. Beat in the milk, egg, melted butter, and vanilla.
4. Let rest in the refrigerator for one hour.
5. Pour enough vegetable oil into a large pot to cover about 4-5 inches.
6. Heat to 185 degrees.
7. Roll the dough out to 1/2-3/4 inch thickness on a floured board.
8. Cut into circles, then cut out centers.
9. Drop into oil and let cook until light brown.
10.Drain on paper plates or brown paper.




Takoyaki Recipe




Ingredients:
1 2/3 cup flour
2 1/2 cup dashi soup
2 eggs
1/2 lb. boiled octopus, cut into bite-size 
1/4 cup chopped green onion
1/4 cup dried sakura ebi (red shrimp)
1/4 cup chopped pickled red ginger

katsuobushi (dried bonito flakes)
aonori (green seaweed powder)
Worcestershire sauce or takoyaki sauce
Mayonnaise

Instructions:
1. Mix flour, dashi soup, and eggs in a bowl to make batter.
2. Thickness of the batter should be like potage soup.
3. Put oil inside cups of a takoyaki grill pan.
4. Pour batter into the cups to the full.
5. Put octopus, red ginger, and green onion in each hole.
6. Grill takoyaki balls, turning with a pick.
7. When takoyaki become rounds and brown, remove them from the pan and place in a plate.
8. Put sauce and mayonnaise on takoyaki and sprinkle bonito flakes and aonori on the top.




Japanese Rice Balls Recipe




Ingredients:
  • 4 cups uncooked short-grain white rice
  • 4 1/2 cups water
  • 1 cup water
  • 1/4 teaspoon salt
  • 1/4 cup bonito shavings (dry fish flakes)
  • 2 sheets nori (dry seaweed), cut into 1/2-inch strips
  • 2 tablespoons sesame seeds

Instructions:
  1. Bung some rice in the old cooker.
  2. I think freshly cooked rice is the best; use water to keep your fingers wet.
  3. Put a bit of rice into an onigiri mold - you should be able to pick one up for about a quid (you can get round ones and triangular ones).
  4. Stick a filling in the middle - I used smoked salmon, but I've also done tuna with a bit of mayo and a little spice.
  5. Bit more rice on top and press with the mold.
  6. Wrap or decorate with nori, furkikake, sesame seeds or whatever tickles your fancy.
