Pork Adobo Recipe






Ingredients:

2 lbs  pork belly
2 tbsp minced or crushed garlic
5 pcs dried bay leaves
4 tbsp vinegar
1 cup soy sauce
1 tbsp whole pepper corn
1 cup water

Instructions:

1. Mix pork, soy sauce and garlic then marinade for atleast one hour.
2. Cook the marinated pork in a heated pot for a few minutes.
3. Add bay leaves, pepper corn and water then bring to a boil. Simmer for 40 mins- 1 hour.
4. Pour the vinegar and simmer for 12-15 mins.
5. Add salt to taste.
6. Ready to serve.









Brazo de Mercedes Recipe




Ingredients:

10 large raw eggs, yolks and whites separated
1/2 tsp cream of tartar
1 tsp vanilla extract
3/4 cup granulated sugar
3 tbsp confectioners sugar
14 ounces condensed milk

Instructions:

1. Combine egg whites and cream of tartar. Use electric mixer to beat.
2. While mixing , gradually put the granulated sugar.
3. Prepare a cooking try and put wax paper on top, grease it.
4. Pour the meringue on the wax paper. Spread evenly using a spatula.
5. Use a comb to add style. Bake it.
6. For the custard filling, whisk the egg yolks using balloon whisk.
7. Put it in a cooking pot, add the condensed milk.
8. Turn on the heat and stir thoroughly.
9. Continue cooking until thick texture.
10. Add vanilla extract and mix again.
11. Turn off the heat and set aside. Let it cool down.
12. Remove the meringue from the oven and let it cool.
13. Get confectioners sugar and sprinkle on top.
14. Put wax paper on top and flip to the other side.
15. Put the custard filling on top and spread.
16. Begin rolling from one end gently.
17. Serve.









Chocolate Crinkles Recipe




Ingredients:

2 cups all-purpose flour
1/2 cup unsalted butter, softened
1  1/4 cup granulated sugar
4 pcs raw eggs
1 tbsp vanilla essence
4 ounces semi-sweet chocolate chips, melted
2/3 cups unsweetened cocoa powder
1/2 tsp salt
1 tsp baking powder
1 cup  sugar

Instructions:

1. Put the softened butter in a mixing bowl to cream. Add the granulated sugar and mix well.
2. Mix the cocoa powder and the melted chocolate. Use electric mixer to mix thoroughly.
3. Combine the eggs and mix again.
4. While beating the egg, put the vanilla essence.
5. When the mixture is fluffy, put in the flour.
6. Mix to evenly distribute the ingredients.
7. Put the baking powder and the salt into the mixture.
8. After mixing all the ingredients, use a clean wrap to cover the mixture and place it in the fridge. (min 3 hrs)
9. After refridgerating, scoop and roll it into a ball, and drench in the flour.
10. Put the balls in a baking tray with wax paper and bake.
11. Ready to serve.








Oatmeal Cookies Recipe




Ingredients:

1 cup oats
3/4 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/2 cup butter, softened
3/4 cup light brown sugar
1 tsp vanilla extract
1 pc raw egg
1/4 tsp salt
1/2 cup raisins

Instructions:

1. Combine baking powder, flour, salt and ground cinnamon then mix well. Set mixture aside.
2. Place the butter in a separate bowl and mix it using an electric mixer.
3. Add the light brown sugar gradually while mixing the mixture.
4. Put the vanilla extract and continue mixing.
5. Put the egg and mix again.
6. Gradually mix the oats while mixing the batter.
7. Put the raisins then mix thoroughly until well distributed.
8. Prepare a baking tray or cookie sheet. Place a wax paper on top and scoop the mixture.
9. Flatten the batter using your hand. (Wet your hands first)
10. Do it to the rest of the cookie batter.
11. Bake it in the oven.
12. After baking, let it cool down for a bit.
13. Ready to serve.








Espasol Recipe




Ingredients:

3 cups toasted glutinous rice flour
1/2 cup toasted sweet rice flour
2 cups sugar
3 cups coconut milk
1 1/2 cups grated coconut, toasted
1 tsp vanilla essence


Instructions:

1. Put the coconut milk in a pot and let it boil.
2. Mix in the sugar while the coco milk boils.
3. Mix it well until sugar is diluted.
4. Pour in the toasted grated coconut in the pot. Just let it cook for a few minutes.
5. Put the toasted rice flour and the vanilla essence.
6. Mix it thoroughly until proper texture can be seen.
7. Make sure your cooking in low heat to prevent getting overcooked.
8. Turn off heat and allow mixture to cool down.
9. When you can handle the mixture, flatten it in a mold.
10. Cut it in your desired length and thickness.
11. Roll it in the toasted sweet rice flour.
12. Do the same procedure to the leftover mixture.
13. Ready to serve.









Bananacue Recipe




Ingredients:

2 cups brown sugar
4 cups cooking oil
6 pcs saging na saba (Asian plantains)

Instructions:

1. Add cooking oil and heat it in a pan.
2. Deep fry the bananas for a few minutes.
3. Put the brown sugar and let it cook.
4. Stir it once in a while. Make sure the brown sugar coated the bananas.
5. When you think it's cooked, skew it using sticks.
6. Do it to all the bananas.
7. Ready to serve.










Brownies w/ Walnut Recipe




Ingredients:

8 ounces unsweetened chocolate chunks or chocolate chips
1 cup chopped walnuts
1  1/4 cups granulated sugar
2 tsp vanilla extract
1  1/3 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup butter
2 tbsp coffee
2 pcs raw eggs

Instructions:

1. Place the chocolate chunks in a bowl and let the steam of the boiling water melt it.
2. Beat the eggs and add the granulated sugar then stir thoroughly.
3. Add the softened butter in the mixture and stir again.
4. Mix the melted chocolates in the mixture and mix well.
5. Add the baking powder and salt then stir.
6. Mix the all-purpose flour gently and mix.
7. Mix the vanilla extract and the coffee. Make sure you mix it well.
8. Put the chopped walnuts in the mixture.
9. Continue mixing the mixture until ingredients and evenly distributed.
10. Prepare the oven, get a baking pan and grease it along with the sides.
11. Pour the mixture into the baking pan and flatten.
12. Place it in the oven and bake.
13. After baking, slice the brownies and place in a serving plate.
14. Ready to serve.








Lemon Mouse Recipe




Ingredients:

1 lemon (juice)
1 lime (juice)
70 grams of sugar
5 egg yolks 
250 grams of mascarpone cheese
1 1/2 sheets of gelatin
200 ml of whipped cream
candied citrus peel

Instructions:

1. Combine sugar, lime juice, lemon juice and egg yolks in a mixing bowl.
2. Stir thoroughly.
3. Steam the mixture for 3-5 minutes. Constantly mix while steaming.
4. Cover the gelatin sheets with cold water while the mixture is still warm. (takes a few minutes)
5. Take the softened gelatin out of the bowl and squeeze gently to remove excess water.
6. Place it in the warm mixture and whisk until completely dissolved.
7. Mix the mascarpone cheese and whipped cream and mix thoroughly.
8. When it thickens, put in glasses and leave in the fridge for 3-4 hrs.
9. Garnish eash glass with candied citrus peel and mint leaf.
10. Ready to serve.









Cold Coffee w/ Ice Cream Recipe




Ingredients:

1 cup of milk
1 tsp of coffee powder
2 tsp of sugar
1/4 cup of coffee ice cream
vanilla ice cream

Instructions:

1. Mix all ingredients in a blender.
2. Blend it and put it in a tall glass.
3. Add a scoop of vanilla ice cream on top.
4. Sprinkle a little coffee powder.
5. Ready to serve.

Coconut Mango Shake




Ingredients:

1/2 of a banana
1/2 cup - 1 cup of mangoes 
3/4 cup of honey water ( a little water and honey )
3/4 cup - 1 cup of coconu milk

Instructions :

1. Put all the ingredients in the blender.
2. Blend it until smooth texture can be seen.
3. Serve it in a glass with ice cubes.
4. Serve and share.









Barbeque Chicken Sandwiches




Ingredients:

200 grams chicken meat, cooked
2 tbsp celery, chopped
1 tbsp pickled relish
3 tbsp mayonnaise
2 tsp Lee Kuim Kee Char Siu Sauce
50 grams cheese, grated
5 pcs bread slices

Instructions:

1. Toast bread until lightly browned on both sides.
2. In a bowl, mix mayonnaise and Lee Kum Kee Char Siu Sauce together.
3. Whisk until sauce is even in color.
4. Add chicken meat and all other ingredients and gently mix together.
5. Spread chicken mixture on bread and pack for sandwiches.









Garlic Fried Rice Recipe




Ingredients:.

6 cups of cooked rice
3 tbsp minced garlic
2 tsp salt
3 tbsp cooking oil

Intructions:

1. Combine salt and rice. Mix well.
2. Prepare a hot pan with oil and fry the garlic until brownish in color.
3. Mix half of the rice first, the stir. Put the other half of the rice and stir again.
4. Make sure the rice would not stick with each other to provide a good texture.
5. Stir until the rice is brownish in color.
6. Place it in a plate and put fried garlic on top.
7. Ready to serve.










Tokneneng (Boknoy) Recipe




Ingredients:

6 pcs boiled chicken eggs
3 tbsp cornstarch
1 cup water
1/4 cup annatto seeds (atsuete)
1 cup all-purpose flour
1/2 tsp salt
1/2 tsp ground black pepper
2 cups cooking oil
Instructions:
1. Drench the boiled chicken eggs in corn starch.
2. In another container, mix the flour , salt , black pepper and atsuete. 
3. Mix thoroughly until you reach the desired thickness.
4. Drench the eggs in the mixture.
5. Deep fry it in a hot pan until reddish brown and crispy.
6. Serve with vinegar and share.








Sago't Gulaman Recipe




Ingredients:

3 cups tapioca pearls (sago)
3 cups brown sugar
1 pack unflavored gelatin
1 tbsp vanilla syrup
3 cups of water (for brown sugar)

Instructions:
1. Cook the tapioca by placing it in a boil.
2. If the pearls become transparent and softer , it's cooked.
3. For the gelatin, mix it with water and put it in a boil.
4. If the gelatin mixture's boiling , you can now put it in a molder.
5. Let it cool, then refridgerate it.
6. Melt the brown sugar in a hot pan to caramelize it.
7. While melting, pour 3 cups of  water and stir thoroughly.
8. Add the sago and gulaman in the sugar-water mixture and put it in a glass.
9. Half-fill the glass then add crushed ice (ice cubes may be used) then add water.
10. Ready to serve.









Buko Pandan Recipe




1 1/2 cup young coconut strips (Buko)
5 ounces condensed milk
8 ounces table cream or all-purpose cream
3 ounces powdered gelatin
1  1/4 cups water
6 drops Buko Pandan flavoring
2 scoops vanilla ice cream 
Instructions: 
1. Combine water and powdered gelatin and mix it well.
2. Pour it in a hot pan and let it cook.
3. Place it in your molder and let it harden.
4. Mix condensed milk and cream. Add the coconut strips and mix it thoroughly.
5. Put it in the fridge to thicken.
6. If the gelatin is hardened and cooled, slice it in cubes and mix it with the milk-cream-coconut mxiture.
7. Add the scoop of ice cream and it's ready to serve.








Pork Siomai Recipe





Ingredients :

½ lbs ground pork
1 cup minced shrimp
2 cups minced water chestnuts
5 tbsp sesame oil
1 tbsp ground black pepper
1 cup minced onion
1 cup minced carrots
½ cups minced white mushroom
1 pack siomai wrapper
¼ cup minced scallions
2 tsp salt
1 piece raw egg
Instructions :
1. Mix all the ingredients thoroughly except for the wrappers. 
2. Wrap the mixture using the siomai wrappers.
3. Steam it for 15 - 25 minutes (depends on the size of each siomai)
4. Serve .








Pork Barbeque Recipe




Ingredients: 
 2 lbs sliced pork
1 pc lemon (get juice)
1/2 cup soy sauce
1/2 cup banana ketchup
2 tsp salt
1 tsp ground black pepper (paminta)
3 tsp brown sugar
8 cloves of crushed and chopped garlic

Instructions:
1. Mix all the ingredients in a bowl and mix them well.
2. Marinate the pork in the mixture overnight. Refrigerate to avoid contamination. Allow atleast 3 hours for the pork to absorb the flavors.
3. Skewer the sliced pork and place it on a plate.
4. Grill both sides evenly.
5. Add a few tablespoons of soy sauce, ketchup and a tablespoon of cooking oil to the leftover marinade to create the perfect basting sauce.
6. Serve with spicy vinegar.









Maja Blanca Recipe




Ingredients:
2 cans of Coconut Milk (gata)
3/4 cup Corn Starch
3/4 cup fresh milk
3/4 cup granulated sugar
1 can condensed milk
1 can whole kernel corn
5 teaspoon toasted grated coconut

Instructions:
1. Pour coconut milk in a hot pot on medium fire. (don't stir)
2. Add the sugar in the pot then stir gently and let it boil.
3. Put the condensed milk inside the pot then stir again.
4. Add the kernel corn and simmer for 8 minutes.
5. Combine fresh milk and corn starch, stir and pour it in the pot with coconut milk mixture.
6. Stir gently to mix the ingredients thoroughly until you reach desired thickness.
7. Pour the mixture in a tray and use a flat tool to flatten the mixture.
8. Cool down for a bit and refrigerate for an hour.
9. Sprinkle some grated coconut and it's ready to serve.








Morcon Recipe




Ingredients:
2 lbs beef eye of round or flank steak, 3/4 inch thick in one piece
2 pieces beef cubes dissolved in 3 cups boiling water for beef stock/broth
1/4 tsp salt
1 piece lemon or calamansi
1/2 cup soy sauce
1/2 cup flour
1/2 cup cooking oil
1 piece medium sized carrot, lengthwise
4 pieces hotdogs, 2 equal pcs lengthwise
2 pieces pickled dill or sweet pickled cucumber, 4 equal pcs lengthwise
3 pieces sliced hard boiled eggs
3 ounces cheddar cheese, cut in strips (about 1/2 inch thick)
Instructions:
1. Marinate beef in soy sauce and lemon juice for an hour.
2. Place beef on flat surface and arrange carrots, pickles, cheese and hotdog.
3. Roll beef from one end to another.
4. Tightly seal the rolled beef with cooking string to prevent from rolling back.
5. Place cooking oil in a hot pan.
6. Roll the beef in flour and fry the beef until golden brown.
7. Put half of the soy sauce-lemon juice marinade,salt then simmer for 30 minutes (pressure cooker) or 2 hours (ordinary casserole)
8. Fry simmered meat for 2 mins. ( optional )
9. Remove string and slice equally.
10. Ready to serve.








Leche Flan Recipe




Ingredients:

10 pcs raw eggs
1 cup evaporated milk
1 can condensed milk
1 cup granulated sugar
1 teaspoon of vanilla extract

Instructions:

1. Use all the eggs ; separate white from yolk. ( use only yolk )
2. Beat the egg yolks with fork or beater.
3. Add condensed and evaporated milk, mix well.
4. Put the mold on the stove on low fire.
5. Put the sugar, mix it until turns golden brown liquid (caramel) 
6. Spread the caramel on the flat side of the mold.
7. Wait for 5 mins and pour the egg-milk mixture gently.
8. Cover the mold with aluminum foil.
9. Steam the molk for 30-35 minutes.
10. After steaming, cool it down and refrigerate.
11. Ready to serve.
